Happy Sunday, and in our house that means focaccia day lately!

In effort to work on my skills before summer, (I have plans to make a farm cart in our driveway and share some of my homemade goodies and flowers from the garden with our neighborhood) I’ve been trialling some recipes and alterations to those recipes!

One of my best friends shared with me her easy peasy focaccia recipe for my christmas dinner and I have been making it ever since! It’s the perfect blend of ‘showy’ and easy, which is just the kind of recipes I love. Once you find a rhythm and kind of grasp the general steps for making this focaccia you can adjust to add different flavors and add ons.

To begin, use this link to make your dough, once you have followed all of the instructions and are ready to choose savory or sweet, spicy or salty, the real fun begins!

Now, I am by no means an expert and hardly a novice, but I like to bake the same way i like to treat gardening. I read rules, find instructions, and then I do whatever I want 😅. My kitchen is a bit cold so the loaves need to proof a bit longer than the initial recipe indicates.

Today I made a jalapeno cheddar loaf for a friend, and two for our freezer, one that was just cheddar and a new one of strawberry jelly with a maple glaze for a sweet focaccia. The sweet one tastes almost like a donut!

Back at christmas when I made my first loaf, I went simple and added just flaky salt and some savory spices (garlic onion and basil).

A few weeks ago when I really wanted to eat something sweet (and somehow I had ordered about 9 extra apples in our grocery delivery) I tried my hand at an apple brown sugar focaccia and a roasted red pepper and garlic.

While both were delicious, the savory roasted red pepper and garlic was delicious made into a focaccia sandwich and the apple brown sugar made the most amazing French toast the next morning!


All of this to say, try this recipe, remember not to take things too seriously and trust your gut when you want to try something! It usually works out if you are following a good idea or being creative.
